Wiki books: e.g. cook book:

This is something that I could envisage using for collaborative learning with lower level students of EFL.
Book corner club:
http://www.macmillanenglish.com/readers/studentsite/bookclub.htm
Learners read the same book from different perspectives and discuss it in a forum. This is a way to turn reading from a solitary to group activity.
The climate change game:
http://www.bbc.co.uk/sn/hottopics/climatechange/climate_challenge/index_1.shtml
Maybe not as collaborative, but could be a good way to raise awareness about a topic which can be difficult to make attractive.
